Strawberry Shortcake Cheesecake
You’ll need: Vanilla cake mix (plus the ingredients called for on box), 2 blocks cream cheese (softened to room temperature), 3/4 cup of powdered sugar, 2 cups of cold heavy cream, 3 cups of strawberries (2 cups sliced and the rest left whole)
Step 1: First, oil an 8-inch springform pan with cooking spray.
Step 2: Next, take a large bowl and mix together all of the vanilla cake ingredients. Then, pour 1/2 cup of the cake mix into the greased pan. (Save the rest of the batter for later use with a separate cake or cupcakes)
Step 3: Bake the cake until it is golden and an inserted toothpick comes out dry.
Step 4: Take a large bowl and use an electric mixer to beat the cream cheese for about 2 minutes until it is light and fluffy. Add the sugar to the mixture and combine. Then, gradually add the cream to the bowl and beat the on high speed until stiff peaks form.
Step 5: Next, vertically press the strawberry slices around the inner edges of the springform pan so that the tops of the strawberries touch the cake.
Step 6: Place the whole strawberries on top of the cake, leaving about a 1/2-inch between each strawberry. Then, cover the cake with the cheesecake mixture. Refrigerate the cheesecake for up to 6 hours.
Step 7: Garnish the top of the cheesecake with more chopped strawberries. Serve and enjoy.
Cannoli Poke Cake
You’ll need: Butter, flour, 1 box of vanilla cake mix (plus the ingredients called for on box), 16 ounces of cream cheese (at room temperature), 1 1/2 cup of mini chocolate chips, 1 cup of powdered sugar, 1/2 cup of sweetened condensed milk, 1/2 cup of butter (softened), 1/2 cup of ricotta, 1 teaspoons of vanilla extract, 1 cup of broken cannoli shells (can purchase from a bakery counter), or waffle cones
Step 1: Preheat your oven to 350 degrees. Then, coat the inside of a 9 x 13-inch baking dish with butter and flour.
Step 2: Prepare the cake mix according to package directions.
Step 3: Bake the cake for about 22 minutes, or until a toothpick inserted in the center comes out clean. Then, allow the cake to cool slightly. Next, use the bottom of a wooden spoon or a straw to poke holes all over cake.
Step 4: Next, pour the sweetened condensed milk inside of the holes. Pour 1 cup of mini chocolate chips over the cake. Refrigerate for 30 minutes.
Step 5: Start preparing the icing. Take a large bowl and use a hand mixer or a stand mixer to beat the cream cheese and butter together. Next, add the vanilla, ricotta, and powdered sugar and continue beating the mixture until all ingredients are completely combined and no clumps remain.
Step 6: Spread the icing over the top of the cake. Then, sprinkle the remaining mini chocolate chips and cannoli shells on top. Serve and enjoy.
