Steak Recipes That Are Perfect for Your Memorial Day Barbecue

Skirt Steak Salad with Cilantro-Lime Dressing

With the temperature outside increasing, salad is a great menu addition for your Memorial Day barbecue. Pair your fresh greens with some hearty protein using this tasty steak recipe.

You’ll need: 1 pound skirt steak, 1 tablespoon of kosher salt, 1 tablespoon of olive oil, freshly ground black pepper, 1 bunch of baby arugula (washed and dried) 1/2 pint grape of tomatoes (halved), and a handful of tortilla chips (broken into strips)

Dressing: 1/2 cup of extra-virgin olive oil, 1/4 cup of lime juice, 1/2 cup of packed cilantro leaves, 1/2 teaspoon of Kosher Salt, 1/2 jalapeno (seeded), and 1 clove of garlic

Step 1: Start by preparing the salad dressing. First, take a blender and pour in the extra-virgin olive oil and lime juice. Then, add the cilantro, jalapeno, garlic, and ½ teaspoon of salt to the blender. Puree these ingredients until the mixture is well-combined and the jalapeno, cilantro, and garlic are thoroughly chopped. Set the dressing aside for later.

Step 2: Next, salt the skirt steak on both sides and allow it to marinate at room temperature while you’re prepping the grill. Once the grill is prepared and the charcoal is hot, brush the steak with olive oil and season both sides with black pepper. Grill the skirt steak over high heat until it’s deeply browned on both sides. (It should take about 5 minutes per side).

Step 3: Remove the steak from the grill and place it on a clean cutting board. Allow it to rest for 10 about minutes. Then, slice the steak into 3 to 4 inch portions with the grain. Afterward, slice against the grain into 1/4-inch strips.

Step 4: Place the arugula onto a large platter. Cover the greens with skirt steak, tomatoes, and tortilla chips. Drizzle the cilantro-lime dressing on top and serve.

Steakhouse-Style Marinated Flank Steak

You’ll need: 1/4 cup of soy sauce, 1/2 cup of Worcestershire sauce, 3 tablespoons of brown sugar, 4 anchovy filets, 2 cloves of garlic, 2 tablespoons of tomato paste, 2 tablespoons of Dijon mustard, 1/2 cup of vegetable oil, 2 tablespoons of chopped chives, 1 medium shallot/about 2 tablespooons (minced), and 1 whole flank steak (about 2 pounds)

Step 1: Mix together the soy sauce, Worcestershire sauce, vegetable oil, anchovies, garlic, brown sugar, Dijon mustard, and tomato paste. Pour this mixture into a blender and combine until it’s smooth and creamy.

Step 2: Transfer 1/3 of this marinade to a separate container. Add the chives and shallots and stir to combine. Set aside.

Step 3: Place the flank steak inside of a gallon-sized zipper-lock bag and pour the remaining marinade into the bag with it. Next, press out any air inside of the bag and seal. Then, allow the meat to marinate for up to 12 hours. Remember to turn the steak occasionally.

Step 4: Once your steak has marinated for your desired amount of time, remove it from the marinade and pat it dry with paper towels. (Don’t worry. The steak has soaked up lots of flavor.) Next, heat one side of your outdoor grill. Place the flank steak over the heated side of your grill and cook until it’s well charred. (This should take about 3 minutes.) Flip the steak and continue to cook on the opposite side for a few minutes until it is well charred.

Step 5: Once you have cooked your steak to your desired temperature, transfer it to cooler the side of grill. Then, cover and cook the steak until its center registers 125°F for medium-rare or 135° for medium. (Cook longer for well-done)

Step 6: Transfer the flank steak to a cutting board and tent it with foil. Then, allow it to rest for at least 5 minutes.

Step 7: Carve and serve the steak with the extra marinade previously reserved.
